Joan Rubio 1

Celler Tiques is Joan Rubió’s personal project. After 15 years as winemaker at Recaredo, when he introduced the biodynamic concept, in 2015 Joan decided to return to the family vineyards to start his own adventure.

The family estate has 8 hectares, 3 planted with cereals and olive trees and 5 of vineyards, in the towns of Santa Margarida i els Monjos, Castellví de la Marca  and Vilafranca del Penedès. All of them are managed following the principles of organic farming (signed up in the organic certified by the CCPAE) and biodynamic (started in 2009).

  • 3,35 has of Xarel·lo;
  • 0,5 has of Macabeu.
  • 0,7 has of Monastrell planted in 2012 and waiting for the first red wine next year 2018.
  • 0,85 has of Malvasia de Sitges planted last 2016.

He minimize the workings at the soil, and let it spontaneously the green cover.

All the grapes are harvested by hand picking with boxes of 15 kg.

All the grapes goes through selection table and works with maceration with the skins.

He do not press.

He do not clarify.

He do a very open filtration (2 microns) to fully respecting the integrity of the wine.
